WE EAT: Slow Cooker Beef Sundaes

I know, I know- “beef” and “sundae” in the same recipe doesn’t sound right, BUT, I promise you it is so so good! Just hang with me here.

Every year, our family attends the Iowa State Fair. My family has a breeding flock of sheep, and shows them at the fair every year. And a visit to the state fair isn’t complete without a stop at the Cattleman’s Stand for a famous beef sundae.

However, eating a beef sundae once a year just isn’t enough, so we adapted the recipe and make them at home! They’re really fairly simple, and just require a little planning ahead.

BEEF SUNDAE INGREDIENTS:

  • 4-5 lb beef roast
  • 1 can beef consume soup
  • 1 medium onion
  • 5 lbs potatoes
  • 1 stick of butter
  • 1/2 cup milk
  • Corn (we use our corn that we freeze from our patch each year)
  • Gravy (you can make your own from the drippings, or use a packet)
  • Grated cheese
  • Cherry tomato

DIRECTIONS

  1. Slice your onion and place on top of the roast, and cover with the beef consume soup in your crockpot. Cook your beef roast in the crockpot for 8-10 hours on low.
  2. Peel and boil your potatoes. Mash them with a hand mixer and add 1 stick of butter and 1/2 cup of milk (or more if needed to make creamy)
  3. Make your gravy and heat up your corn.
  4. When roast is finished, shred your beef. If you have a high quality roast, it should fall apart and shred easily.
  5. Construct your sundae- mashed potatoes, corn, roast beef, gravy, cheese, and a cherry tomato on top! (I personally don’t like tomatoes, so I leave mine off- it’s really just for the “ice cream sundae” effect 😉

Seriously- this beef sundae is the perfect comfort food and so so good!

WHY WE EAT BEEF

Red meat is an excellent source of high biological value protein, vitamin B12, niacin, vitamin B6, iron, zinc and phosphorus. When choosing beef, you have the choice between grain fed or grass fed. Our beef that we butcher is primarily grain fed- but also have access to hay in their daily rations. Which kind is best?

The difference is grass fed meat is it’s more lean, with less fat content and higher in Vitamin A. But grain fed tends to be more tender, with higher amounts of Omega 6 (antioxidants).

The fact of the matter is both grass and grain fed beef are raised humanly- with proper care and consideration for the consumers who will be purchasing it. One isn’t better than the other- they both have their benefits, to meet the different needs of different consumers.
